Spicy Hot Chocolate (Paleo, AIP, Keto)

So as you can see, I have had pretty much no time to blog new recipes although I have a lot of recipe posts ready to be typed and posted. So anyways, this past weekend, I finally completed the first draft of the book and it looks good! My son has been helping me design the book. Which has definitely made things a lot easier. I cannot imagine how much time I would have needed if I had to correspond (as in back and forth) with someone over the phone. Having him at home next to me definitely helps!

Spicy Hot Chocolate (Paleo, AIP, Keto)

Spicy hot ‘cocoa’ with the flavors of cinnamon and ginger! Dairy free and junk free!
Ingredients
1/2 cup coconut milk
1/2 cup water
One 2 inch cinnamon stick
1/8 to 1/4 tsp ground ginger
pinch sea salt
1 tbsp carob powder or raw cacao (use carob for AIP)
1/2 tbsp maple syrup (use any keto approved sweetener for Keto)
1/4 tsp vanilla powder or extract (use powder for AIP) – optional
1 tsp coconut oil
1 tsp unflavored grass fed gelatin
extra coconut milk or coconut cream to drizzle on top
Instructions
In a sauce pan, add all the ingredients except the coconut oil and gelatin. Let the mixture come to a simmer and then stir using a spoon while continuing to heat on low to mix the carob completely. Turn heat off and discard the cinnamon stick.
Add the coconut oil and the gelatin and blend the mixture using a hand blender. (You can use a regular blender too but exercise caution when blending hot liquids)
Transfer to a mug and drizzle the extra coconut milk/cream on top!
